With Thanksgiving just around the corner, M, E, and I have started our holiday baking. Here's a scrumptious recipe for the Triple Chocolate Pecan Cookies we baked this morning. Triple Chocolate Pecan Cookies
1 1/4 cups plus 2 tablespoons all purpose flour
1/4 cup cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup granulated sugar
2/3 cup packed light brown sugar
1 large egg
1 teaspoon vanilla
1 cup chocolate chips
3/4 cup pecans, plus additional for garnish
11-ounce bag white chocolate bits or chocolate bark
Heat oven to 375 degrees. In a medium bowl, sift together the flour, cocoa, baking soda, and salt. Set aside. In a large bowl, combine the butter and sugars. With an electric mixer, beat until light and fluffy, scraping the sides of the bowl as needed. Reduce speed to low and add the egg and vanilla. Gradually add the dry ingredients and then mix in the chocolate chips and pecans.
On baking sheet, drop by tablespoon, 1 1/2 inches apart. Bake 8 - 10 minutes. Let cool on waxed paper. Once cool, melt white chocolate in microwave in 15 - 30 second bursts.
Dip cooled cookies in white chocolate and garnish with pecans. Let white chocolate completely set before storing.

Cola-Cake Recipe
Cake:
2 cups sugar
2 cups all-purpose flour
1 1/2 cups small marshmallows
1/2 cup butter or margarine
1/2 cup vegetable oil
3 tablespoons cocoa
1 cup Coca-Cola®
1 teaspoon baking soda
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla extract
Preheat oven to 350 degrees. In a bowl, sift sugar and flour. Add marsh- mallows. In
saucepan, mix butter, oil, cocoa, and Coca-Cola. Bring to a boil and pour over dry
ingredients; blend well. Dissolve baking soda in buttermilk just before adding to
batter along with eggs and vanilla extract, mixing well. Pour into a well-greased 9-
by-13-inch pan and bake 35 to 45 minutes. Remove from oven and frost
immediately.
To make frosting, combine butter, cocoa and Coca-Cola in a saucepan. Bring to a
boil and pour over confectioners' sugar, blending well. Add vanilla extract and
pecans. Spread over hot cake. When cool, cut into squares and serve.
