Cajun Cooking

Instead of going to the Family Forestry Expo on Mother's Day, we went on Saturday. It was lots of fun albeit a repetition of last years events. It was the 20th Anniversay of the expo and cake was served to all who attended. It was a special treat, I thought, because it was cold and resembled doberge cake. Doberge cake is one of those New Orleans treats I miss since living up here in Montana. Coming from a city renowned for its food, my opinion is pretty tough on the lackluster fare found up here. If I want so called "good" food I have to make it myself and sometimes it's hard to find the ingredients in the local supermarkets. My gumbo contains frozen shrimp, I now make my own olive salad for muffalleta's, and my red beans no longer are seasoned with pickle meat. I was simply thrilled to find Garlic Tabasco on the shelves of Smith's last week and bought two bottles. Here's a quick list off of the top of my head of southern, cajun, and New Orleans style foods that cannot be found here:
  1. Boiled crayfish....I've joined a crayfish group on Facebook, so I can see pictures of them in cyberspace and drool.
  2. French market donuts or beignets....most of the donuts are heavy and bready.
  3. Snowballs....no finely shaved ice or 30 flavors to choose from.
  4. French bread....only store made. Not the crisp Reising's kind.
  5. Po-boys....the only Po-boy you'll find here is in the bakery department. It's kind of like a pistolette packaged under the name of po-boy.
  6. King Cake...another morsel we have to make ourselves.
  7. Fresh pastries....I think the grocery store orders their eclairs from somewhere?
  8. Crabs....I mean the blue kind. Not in a can or from the Pacific Ocean.
  9. Popeye's chicken...too spicy?
  10. Seafood restaurant...definitely not something that is understood here. I can think of one place that sells Italian, Chicken, and Seafood. Don't think you'll find a fresh seafood platter there!
  11. Hubig Pies
  12. Elmers candies
  13. Manual's hot tamales
  14. Coffee and Chicory...I have a standard order with Community to ship 2 packages a month.
Well, my mouth is watering and I'm sure I could think of some more to add to the list but it's time to go for now. Let me know if you want my olive salad recipe!
